Made from 100% Merlot grapes this wine is a fragrant light fruity style. Free run juice is decantered off the Merlot skins 24 hours after processing to provide a wine that retains many of the Merlot fruit characters without the tannin structure. Easy drinking with a balance of sweet summer fruits, delicate acidity and soft earthy tones. It has a beautiful raspberry flavoured nose and is a great summer wine to enjoy with friends. Picked at optimum ripeness this wine is deep purple in colour with a bouquet of lifted sweet berry fruit including blackcurrant and mulberry. A medium bodied wine with fleshy plum flavours coming through on the mid palate and finishing with a fine silky soft and delicate leathery finish. Made from premium shiraz grapes from the old vines Jump Up Creek block on the Ironbark Property. 2007 was a dry year and this wine is a typical Hunter Valley Shiraz full of flavour and character. The wine is deep red in colour and has an intense aroma of peppery shiraz fruit and integrated oak. The palate has excellent weight and is full of complex fruit flavours and balanced with a firm tannin finish. Food Match: perfect with any red meat dish, particularly hearty steaks, venison or duck. Dry conditions of 2007 led to lower yields and highly concentrated fruit flavours in the berries. The wine is a deep crimson colour with a nose that delivers flavours of vanilla, ripe berries and dark chocolate. The palate is full bodied with excellent length and depth, and finishes with a fine tannin finish. Food Match: A perfect wine to accompany beef or lamb casseroles.
